Use it Up: Eliminating food waste.
In the fridge, I have corn on the cob, an acorn squash, and sweet potatoes to use up. Now what to do with them? I think next week I will plan a mock shepherd's pie using sweet potatoes instead of regular potatoes. I have leftover curry pork and rice, which means the enchiladas didn't get made. Everything got moved up a day. Tomorrow, Friday the 16th, we'll have chicken enchiladas. We can have corn on the cob with those. The fish chowder will be moved to Saturday and the chicken and rice to Sunday. I'll cook the squash up to go with that dinner.
